Gilbert grew up with her sister, writer and historian Catherine Gilbert-Murdock, on a small family farm in Litchfield, Connecticut, where they grew Christmas trees.

Living in a region without neighbors and without a television or even a record player, Gilbert and her sister spent their time reading and entertaining themselves by writing small books and plays.

In 1991, Gilbert received a Bachelor's degree in Political Science from New York University, after which she worked as a cook, waitress, and journalist. She wrote short stories about her culinary experiences and briefly mentioned them in her book "The Last American Man" (2002).
